Cylindrical cheese vat for processing milk (cow, sheep,) to cheese mass, saving sanitization and high yield. Available for cheese mass for pasta filata cheese like mozzarella, pizza cheese, kaskaval, and for cheese mass for hard or semi hard cheese like pecorino or for fresh cheese.
Designed with an horizontal cylindrical vat in stainless steel AISI 304.
Lower part of the vat is double jacket designed, for steam or warm water circulation (complete of plate exchanger for warm water production, recycling and control), is sloping towards cheese mass outlet to sure full discharge of the cheese mass inside.
Mixing and cutting tools is singed of the vat sides. It has been designed on horizontal shape in order to treat in same way all quantity of the milk or cheese mass inside vat.
The machine was studied to give it the possibility to make different processes, that means with enzymes, citric acid or mixed process, all controlled by PLC.
The curd churner run thanks electromechanical system, complete of electrical motor and mechanical reducer controlled by inverter and is assembled on special support in steel.
On the upper part of the vat we have two manholes, thanks it the operator can follow the working cycle.
Milk inlet from the bottom side of the vat, though piping with no foam system.
Inside the vat is assembled an automatic filter in AISI 316 to suck whey in exuberance and according customer inquiry (quantity to suck) and recipe set in PLC.
System is complete with a whey pump.
For the automatic cleaning and sanitizing at the end of the production are assembled pipes ending with four rotary cleaning sprinklers connected to the main CIP station.
The cheese vat is complete closed for the CIP cleaning system.
Complete of PLC to control any operation and to set processing recipes and save or download productions data for a set time.
